The other night when I made the awesome Panko Crusted Tilapia fillets I ended up doubling the batch which left me with several fillets for the next night. I decided to switch up the recipe a bit and turn the fish fillets into an awesome fish sandwich. I used the homemade tartar sauce and combined it with some green onions, red cabbage and green cabbage. Stirred it all up until it was nice and juicy and then sliced some fresh tomatoes for on top of the fish. I reheated the tilapia in a saute pan with a little olive oil until they were crispy and then served them on a warmed bun. Drizzle with a little extra fresh lemon and this meal took on a whole new dimension that we all loved!! The buttery, flavorful fish just melts in your mouth with a crispy, cool coleslaw to balance it all out perfectly. The hearty bun helped fill up all of my kiddos and it was a meal I will definitely be bringing back later this month. Inexpensive, yet full of high end flavor and ingredients. Hope you enjoy 😉

Fish Sandwiches with Tartar Sauce

Crusted Fish Sandwiches with Coleslaw
Ingredients
  1. 1 recipe Panko Crusted Tilapia Fish Fillets, prepared and cooked until done
  2. 1 recipe homemade tartar sauce (you will have a little extra sauce depending how much cabbage you use)
  3. 1/2 head red cabbage, shredded very fine
  4. 1/2 head green cabbage, shredded very fine
  5. 3 stalks green onion, sliced
  6. 2-3 tomatoes, sliced
  7. 6-8 hoagie buns or hamburger buns

Instructions
  1. Prepare the fish as explained in the recipe. Make the tartar sauce and keep in the fridge until ready to serve. Slice the cabbages and green onions and place in a serving bowl. Slice the tomatoes. When fish is cooked, pour some of the tartar sauce on the cabbage until it is moist and completely coated. Place the fish fillet on the bottom of the hoagie bun. Put a good portion of the coleslaw on top of the fish, add some sliced tomatoes and serve with the top bun.
