One of my favorite dinner salads is the BLT Chicken Salad I posted about several years ago. We made this the other night and I thought I would update my picture and remind you of this delicious salad in case you need a quick meal idea this week 😉


- ½ cup ranch dressing
- 1/3 cup bbq sauce of choice
- 8 c. torn salad greens and/or spinach
- 2 large tomatoes, chopped
- 1/4 cup green onions, sliced
- 1 cup shredded cheddar cheese
- 1 cup croutons
- 3 boneless, chicken breasts, cooked & cubed-seasoned with salt & pepper
- 10 bacon strips, cooked & crumbled
- 2 eggs, boiled, peeled and diced
- Prepare and chop the vegetables. Boil the eggs for 5-7 minutes and then let cool. Peel the eggs and chop. Place salad greens on a large serving platter. Sprinkle with tomatoes, chicken and bacon. Garnish with eggs. Drizzle with ranch dressing and bbq sauce. Avocados also make a yummy addition.
This will be so good this summer, when its to hot to cook…
