Lemon Melt in Your Mouth Cookies
  1. 1 cup butter
  2. 1/2 cup powdered sugar
  3. 4 tsp. lemon gelatin powder (Jello or you can use dry lemonade powder)
  4. Zest of 2 lemons
  5. 4 Tbls. fresh lemon juice
  6. 1/2 tsp. salt
  7. 1/2 tsp. vanilla
  8. 2 cups flour
  9. 1/2-1 cup white chocolate chips (optional)

  1. In a mixing bowl, beat the butter and powdered sugar until smooth (for about 3-5 minutes) Then add the lemon gelatin powder, zest of the lemon, lemon juice, salt & vanilla. Beat until smooth. Add the flour and beat. Mix in the chocolate chips. Spray a cookie sheet with cooking spray. Place 12-15 tablespoon balls of the dough onto the pan. Bake the cookies at 350 for 6-8 minutes. Don't overbake these cookies. When the cookies look mostly baked, remove them from the oven and let them rest for a couple minutes. Roll the cookies into extra powdered sugar and eat warm or cold.
