If you love a melt in your mouth cookie, these lemon cookies are for you!! This recipe is a mix between a Mexican Wedding Cookie, a lemon bar and a chocolate chip cookie. They are so delicious and perfect for spring. These cookies would be so cute at a baby shower, wedding shower, or a spring time luncheon. - 1 cup butter
- 1/2 cup powdered sugar
- 4 tsp. lemon gelatin powder (Jello or you can use dry lemonade powder)
- Zest of 2 lemons
- 4 Tbls. fresh lemon juice
- 1/2 tsp. salt
- 1/2 tsp. vanilla
- 2 cups flour
- 1/2-1 cup white chocolate chips (optional)
- In a mixing bowl, beat the butter and powdered sugar until smooth (for about 3-5 minutes) Then add the lemon gelatin powder, zest of the lemon, lemon juice, salt & vanilla. Beat until smooth. Add the flour and beat. Mix in the chocolate chips. Spray a cookie sheet with cooking spray. Place 12-15 tablespoon balls of the dough onto the pan. Bake the cookies at 350 for 6-8 minutes. Don't overbake these cookies. When the cookies look mostly baked, remove them from the oven and let them rest for a couple minutes. Roll the cookies into extra powdered sugar and eat warm or cold.
