Tomorrow is Easter and such a special, family day. I am so thankful for my Savior Jesus Christ and his Atonement and Resurrection and what that means to me in my life. I am excited to focus tomorrow on Him and enjoy sharing our feelings and gratitude with my family. Now…on this special holiday, just any old dessert won’t do. We are planning on having Strawberry Vanilla Bread Pudding. This dessert is special in all aspects!! Creamy, soft bread pudding, strawberry filling, and a topping of smooth, vanilla cream sauce. It is a piece of heaven on earth!! Happy Easter and hope you enjoy 😉

Strawberry Vanilla Bread Pudding
Ingredients
  1. 2 cups heavy cream
  2. 1 1/2 cups milk
  3. 2 1/2 cup sugar
  4. 3 tsp. vanilla
  5. 2 eggs
  6. 2 Tbls. butter, melted and spread all over the inside of a 9x13 pan
  7. 13 slices white bread or french bread, that has been dried and no longer soft
Strawberry Mixture
  1. 4 cups strawberries
  2. 3/4 cup sugar
  3. 1 tsp. lemon juice
Vanilla Sauce
  1. 1 cup heavy cream
  2. 3/4 stick butter
  3. 1/2 cup sugar
  4. 1 tsp. vanilla
  5. 2 Tbls. flour
Garnish
  1. Serve with extra whipped cream or strawberries

Pudding
  1. Cut the bread inot one inch pieces (the drier the bread the better). Place the bread in the bottom of a greased 9x13 pan. Whisk together the cream, milk, sugar, vanilla and eggs. Pour this mixture all over the bread evenly. Prepare the strawberry mixture (below) and pour on top of the milk/bread mixture.
Strawberry Mixture
  1. Place the strawberry mixture ingredients together into a food processor and pulse several times until the strawberries are broken down. Pour this mixture over the top of the milk and bread mixture. Bake covered with tinfoil at 350 for 55-65 minutes or until the center is somewhat firm and the top is lightly golden brown. While pudding is cooking, make the vanilla sauce.
Vanilla Sauce
  1. Place all of the vanilla sauce ingredients into a sauce pan and simmer until the sugar is dissolved and the sauce is smooth. Serve with extra heavy whipped cream and more fresh, sliced strawberries for garnish.
