Okay, I have to admit I am a bit obsessed with chipotle lately. After that Honey Chipotle Salad I haven’t been able to have enough of that dressing. Last night I made Baja Fajitas (which I LOVE) and served the chipotle dressing from the salad on top of the fajitas (I just added some cilantro to the dressing). It was fabulous. Then…tonight we had these Chipotle BLT Sandwiches. I added some more of the Honey Chipotle dressing to some mayonnaise, added some more cilantro and another chipotle pepper, pureed and viola! A new, amazing sandwich spread that took these BLT’s to a whole new level. I had made homemade wheat bread today which made the sandwiches even better and then grilled them on a skillet with some butter to melt the cheese and make the bread crusty. Once the cheese was melted I added slices of fresh tomatoes and lettuce and the combo was a HUGE hit for all of us! If you need a quick, weeknight meal that tastes totally gourmet, these BLT sandwiches are just the ticket! Enjoy 😉
Chipotle BLT Sandwiches

Ingredients
Honey Chipotle Dressing (from previous recipe) plus some more mayo and cilantro to taste
8-10 slices of wheat bread
1-2 cups sliced or shredded cheese
1 lb. bacon, cooked and crumbled
Tomatoes, sliced
Lettuce pieces
Butter
Add ingredients to shopping list

Instructions
Mix together the dressing to your taste. If you don't have leftover Honey Chipotle dressing, just add a chipotle pepper or two to some mayonnaise. Add a little lime juice and salt & pepper. Spread both sides of the bread with some chipotle spread. Heat a flat griddle to medium heat. Place a little pat of butter on the griddle and let melt. Place one of the pieces of bread on the griddle. Top with some cheese and the bacon. Put another piece of bread on top and then cook until the cheese is melted. Cook the other side of the sandwich until golden. Remove sandwich from the griddle and place a few slices of tomato and lettuce. Serve warm.
Oh, once you buy them you will LOVE them! They will be in a small can in the Mexican aisle. Right by the canned diced chilies. They will just be called Chipotle Peppers. The adobo sauce is just the sauce that is around the chipotle peppers 😉 Buy several cans for food storage because you will love them!
We made these a couple of nights ago and they were a big hit! The chipotle sauce gives a really good flavor. Since one small can of chipotle peppers goes a long way, I just blend the whole thing up when I first open it, and then freeze the rest to use as I need it, and it works great!
