Saturday morning breakfasts have been a tradition in my home since I was a little girl. There was something special about waking up to the smell of pancakes and bacon on the weekends. Probably one of my favorite foods to make (or create) are breakfast meals. The combinations of waffles, syrups and pancakes are endless. This past weekend I had several bananas that were ready to be turned into banana bread. The thought occurred to me that why couldn’t I turn those bananas into a banana bread-ish waffle recipe. I wasn’t sure how they would end up, but I thought we’d give it a try. The result was unbelievably good–way better than I had even hoped for!! The texture was moist, perfectly soft and even better than these Banana Hot Cakes I love so much. They held up a little better in waffle form than in a pancake, which I loved! Now..I have to admit one of the best parts about this recipe is the Browned Butter Syrup. Oh, heaven help me from drinking it by the cupful!! It was AMAZING!! The browned butter start to the recipe gives this syrup a nutty-caramel flavor. Drizzled over these waffles and then garnished with Sugared Pecans was heavenly! Banana Bread Waffles with Browned Butter Syrup
Banana Waffles
  1. 4-5 ripe bananas, peeled
  2. 6 Tbls. butter, slightly melted
  3. 1 cup brown sugar
  4. 2 tsp. cinnamon
  5. 2 tsp. vanilla
  6. 5 eggs
  7. 1 Tbls. baking soda
  8. 4 cups flour (1/2 white flour and 1/2 wheat flour works great!)
  9. 2 tsp. baking powder
  10. 1 cup milk
  11. Candied nuts, garnish
  12. Sliced bananas, garnish
Browned Butter Syrup
  1. 1 stick butter
  2. 1 cup brown or white sugar
  3. 3/4 cup evaporated milk
  4. 1 tsp. vanilla

  14. 1 stick butter
  15. 1 cup brown or white sugar
  16. 3/4 cup evaporated milk
  17. 1 tsp. vanilla
  18. Place the butter into a sauce pan and heat on medium-high heat until butter becomes slightly brown and you can smell the nutty aroma. Once the butter is browned, turn down the heat and add the sugar and milk. Continue to simmer on low heat until the sugar is completely dissolved. Once the sugar is melted, add the vanilla. Set syrup aside to cool slightly while waffles are cooking.
