Are you ready for this one? You have to think outside of the box for this recipe, but if you can…you will LOVE it!! If you are a fan of balsamic vinegar, gorgonzola cheese and recipes with a sweet/savory blend, you will be on cloud 9 with this combination of ingredients. At first my family thought this recipe was so strange..and I have to admit, two of my kids just ate the pork chops, but the rest of us really enjoyed the different flavors together. Serve these Plum Pork Chops with some garlic mashed potatoes and some steamed broccoli and you have a dinner special enough for any occasion (hint, hint..perhaps Mother’s Day? 🙂

Balsamic Plum Pork Chops
  1. 1 large red onion, sliced thin
  2. 1/2 stick butter
  3. 1/4 cup balsamic vinegar
  4. 4 plums, diced small
  5. 1 tsp. salt
  6. 1/2 tsp. black pepper
  7. Dash cayenne pepper
  8. 1/2-1 cup gorgonzola or blue cheese, crumbled
  9. Grill 8-10 boneless pork chops and season with salt & pepper until cooked through.

  1. In a large saute pan place the red onions and butter together and saute until the onions are tender. Then add the balsamic vinegar, diced plums, salt, pepper and cayenne pepper.
  2. Let the ingredients continue to simmer on low until pork chops are grilled.
  3. Grill 8-10 boneless pork chops and season with salt & pepper until cooked through.
  4. Remove from the grill and place each pork chop onto the serving plates. Cover the pork chop with the plum mixture and then top with gorgonzola or blue cheese. Serve hot so the cheese begins to get soft and melt over the plums and pork chops.
