Can you feel summer in the air? I can hardly wait until school is out and we can enjoy the warm nights of summer. It’s about this time when I put away all of the warm, winter recipes and pull out some of my favorite ‘quick and easy summer recipes’. As football season and track approach for my kids, it’s important I add to my meal planner some meals that can be thrown together–and will also transfer well (if needs be). Most track meet nights we end up eating dinner on the bleachers while watching my daughter run. Last summer these Turkey Chipotle Wraps were a go-to quick dinner solution that we all LOVE! These wraps would also be wonderful on a picnic, in a school lunch or made smaller and served in rings as an appetizer. If you have good quality turkey lunchmeat these are super quick..or, throw a turkey breast into your crock pot for several hours and then use fresh turkey. Either way, these flavorful chipotle wraps are sure to be a favorite weeknight meal at your house too! Enjoy 😉


- 8 oz. cream cheese, softened
- 2 chipotle peppers in adobo sauce, chopped fine
- Juice of 1 lime
- 2 Tbls. mayonaise
- 1 Tbls. cilantro (dry or fresh), chopped fine
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- Tortillas (sundried tomato was great)
- Cooked and shredded turkey or good quality turkey lunchmeat
- 1 avocado, sliced
- 2-3 roasted red bell peppers
- Spinach or lettuce, torn
- Tomatoes, sliced
- Sliced cheese or shredded cheddar cheese
- If you don't have good quality turkey lunch meat, cook a turkey breast into a crock pot. Cook the turkey breast for 4-6 hours, or until fork tender. Shred the turkey from the bones and use for these wraps. Salt and pepper turkey as desired.
- In a microwave safe bowl, add the cream cheese. Microwave for 30 seconds, or until soft and mix with a fork until smooth. Add the chopped chipotle peppers and adobo sauce, lime juice, mayo, and cilantro. Season with salt and pepper to your liking and set aside until ready to make your wraps.
- Slice the avocado, peppers, lettuce and tomatoes. Spread a generous amount of the chipotle spread onto the tortilla. Place a good portion of the shredded turkey onto the center of the tortilla. Top with avocado, peppers, lettuce, tomatoes and cheese. Roll up the tortilla as tightly as you can and serve. If you like your sandwich warm, put the spread, turkey and cheese on the tortilla and then warm in the microwave for 30-60 seconds, or until warm. Remove from the microwave and add the other ingredients to the wrap. Serve warm.
