After the S’more Bars I made a couple weeks ago, I can’t get cookie bars out of my system. There is something about the ease of throwing cookie batter into a bar pan and getting these pretty, perfectly cut squares of goodness–so much easier than babysitting pans of cookies. Not to mention you can pack these bars full of all sorts of goodness and they come out great every time. This weekend I was determined to do something with the huge bag of pretzels I bought from Costco. I am a big fan of salty-sweet combinations so it was only natural the pretzels found their way in these bars– along with plenty of milk chocolate and caramel. The combination reminded me of the Take 5 candybars, thus their name 😉 The buttery cookie base helps keep everything together, and gives a chewy, moist addition to these bars. If you are having a craving for a candy bar confection your sweet tooth will not be disappointed. These bars are plain awesome!!

Take 5 Pretzel Caramel Bars
  1. 2 sticks butter, room temperature
  2. 1/3 cup penut butter
  3. 1 cup brown sugar
  4. 1 cup white sugar
  5. 3 eggs
  6. 3 table spoons cornstarch
  7. 1 teaspoon vanilla
  8. 1 teaspoon baking soda
  9. 1 1/2 teaspoons baking powder
  10. 1 cup pretzels chopped
  11. 3 cups flour
  12. 1/2 teaspoon salt
  13. 1 (12 oz.) bag of chocolate chips

  1. In a mixing bowl with cookie paddles, cream together the butter, peanut butter, brown sugar and white sugar until smooth and creamy. Then add the eggs, cornstarch, vanilla, soda, powder and continue to mix until combined. Crush one cup of pretzels into small bits and pieces. Add the pretzels to the cookie mixture along with the flour. Add the salt and chocolate chips and continue to mix until all of the dry ingredients are combined. Grease a 9x13 pan with cooking spray and pour the batter into the pan. With a knife, try and get the batter as even as possible. Bake the bars at 350 for 20-25 minutes, or until the center of the bars are cooked through and no longer gooey (don't over bake though because the bars will set up as they rest on the counter). As soon as the bars are taken out of the oven, sprinkle on the top a few extra chocolate chips, some more crushed pretzels and drizzle with caramel topping (ice cream topping works great). Let bars rest at room temperature for an hour or longer, or until the bars set up. Cut into squares and serve. These bars can be eaten warm with vanilla ice cream which is also delicious! 🙂
