Can you believe it’s the week of July 4th? Where has this past year gone? If you are like me you are probably putting together your weekend plans, planning details for your barbecues, camping trips, firework parties, etc. What would July 4th weekend be without great food? Since blueberries are always on sale this week, I thought this Blueberry Lemon Cheesecake Bar would be the perfect recipe to share with you for your upcoming events. It is even slightly patriotic with the blue and white layers 😉 Not only is this cheesecake rich and smooth as silk, but the cookie crust and crumble topping take this dessert over the top! It is four layers of pure goodness. Hope you give this recipe a try, I know it will be a huge hit this weekend!

Blueberry Cream Cheese Crumble
Crust
  1. 1 pkg. Keebler Butter Pecan Cookies
  2. 6 Tbls. butter
Cream Cheese Filling
  1. 2 (8 oz.) packages cream cheese
  2. 1/2 cup sugar
  3. 2 eggs
  4. Zest and juice of one lemon
Crumble
  1. 1 cup white sugar
  2. 1 cup flour
  3. Zest of 1 lemon
  4. Juice of 1/2 lemon
  5. 1/2 cup butter
  6. Dash of salt
  7. 1 1/2 cups blueberries

Crust
  1. Put in a food processor and blend together until crumbs and butter are incorporated. Spread into a 9x13 baking dish and press flat and even. Bake at 325 for 10-12 minutes or until lightly golden brown. Remove from the oven and let cool.
Cream Cheese Layer
  1. In a mixing bowl with an electric mixer beat together the cream cheese and sugar until smooth. Then add the eggs and lemon zest and juice. Beat until combined and smooth. Pour mixture over the cooled crust and then bake for another 28-30 minutes or until slightly set, but not completely cooked. While the cheesecake is baking, make the crumble.
  2. In the same food processor, add the crumble ingredients and pulse until combined. Once the cheesecake has been baking for 28-30 minutes, remove from the oven and then sprinkle 1 1/2 cups blueberries all over the top. Sprinkle the crumble on top of the blueberries and then return to the oven for another 5-7 minutes, or until the top is slightly golden brown (you may need to put the bars on the top rack in your oven to get it slightly browned). Remove bars from the oven and let rest in the fridge or on the counter for up to 2 hours to cool and then serve.
