I have been so incredibly busy this summer that it seems like time goes by so quickly I forget that it is dinner time and that I need to feed my family.  I have  a few dishes that are my go to meals when I know I am going to have a crazy day and dinner will need to be thrown together quickly.  The prep time on this steak recipe is minimal and very forgiving you can easily substitute ingredients you have on hand. Throw it together in the morning and forget about it until dinner time as it only takes 10 minutes to cook.  If you don’t feel like making side dishes this recipe is delicious as street tacos with white corn tortillas and some sour cream.

Marinated Flank Steak with Cilantro Chimchurri
Steak
  1. 1 1/2 pounds flank steak
  2. 1/3 cup low sodium soy sauce
  3. 1/3 cup canola oil
  4. 1/4 cup lime juice
  5. 1/4 cup cilantro
  6. 1 tbsp brown sugar
  7. 1-2 tsp sesame oil
  8. 1/2 tsp salt
  9. 1/4 tsp cayenne pepper
Chimichurri
  1. 1/2 cup parsley
  2. 1/2 cup cilantro
  3. 1/4 cup olive oil
  4. 1 tbsp white wine vinegar
  5. 2 tbsp lime juice
  6. 1/2 tsp ground cumin
  7. 1/2 of a jalepeno seeded
  8. 2 garlic cloves
  9. 1/4 cup cojita cheese (optional)

Instructions
  1. Mix all of the marinade ingredients in a blender until it lightens in color and becomes slightly frothy. Pour into a zip lock bag along with the flank steak and marinade for 3 hours to overnight. When ready preheat broiler and broil on each side for 4-5 minutes. Let the steak rest covered with foil for 5 minutes then slice steak thinly against the grain.
  2. Mix all of the Chimichurri ingredients in a blender and serve with the flank steak. Top with crumbled Cojita.
