I know I have mentioned before, but one of my favorite Food Channel shows is definitely The Sandwich King. I am a sucker for a new sandwich recipe and the other day we found one of my new favorite recipes from this show. These Louisiana Chicken Sandwiches are the bomb!!! They are spicy, flavorful, easy to prepare and the cajun ranch dressing is AMAZING. These are perfect for a quick summer’s night meal that won’t heat up your kitchen. - 2/3 cup buttermilk
- 3 Tbls. hot sauce (Frank's Hot Sauce)
- 2 Tbls. honey
- 1 tsp. cumin powder
- 1 clove garlic, minced (or garlic powder)
- Juice of 1 lime
- Salt & pepper (about 1/2 tsp. each)
- 6 boneless skinless chicken breasts
- 1 cup good mayonnaise
- 2 Tbls. buttermilk
- 2-3 Tbls. hot sauce
- Juice 1/2 lemon
- 1 Tbls. cajun seasoning
- 1 tsp. dijon mustard
- 1 tsp. salt (or to taste)
- 2 green onions, sliced
- 1 celery stalk, finely diced
- 1/2 red bell pepper, finely diced
- 1 clove garlic, minced
- Place all of the marinade ingredients into a gallon size ziploc bag and combine together until incorporated. Add the chicken breasts and let marinade at least 2 hours or overnight. When ready to make sandwiches, heat a grill to medium heat and grill the chicken until the center is at least 165 degrees, or the center is no longer pink. Remove chicken from the grill and place a slice of pepperjack cheese on top of each breast. Prepare the cajun dressing.
- In a bowl combine all of the dressing ingredients.
- To build the sandwich place the chicken with the cheese slices onto a roll or ciabatta bread. Add a piece of lettuce and plenty of the Cajun Ranch Dressing. Serve immediately.
