Here is the recipe I promised I’d post yesterday. The other night we made both the orange popcorn and this lime popcorn and it wasn’t until we finished a huge bowl of each that we all could vote on our favorites. Funny enough our family was completely divided. Half of us loved the orange the best and the other this lime popcorn. This lime popcorn has a totally different texture than the orange one. This is more of a sticky, sweet, buttery coating. The zest and lime juice gives this popcorn such a fun and unusual twist. And what goes better with lime than coconut? Nothing in my book. Combine it all together and you have a deliciously sweet & sour treat your family will go crazy over 😉 Enjoy!

Coconut Lime Popcorn
  1. 1 cup sugar
  2. 1 stick butter
  3. 1/2 cup cornsyrup
  4. Zest of 2 limes
  5. Juice of 1/2-1 lime
  6. 1/2 tsp. salt
  7. About 6-8 cups of popped popcorn
  8. 1 cup coconut flakes

  1. In a sauce pan combine the sugar, butter and cornsyrup. Bring the mixture to a medium boil and boil for 2-3 minutes, or until the sugar is mostly dissolved. Add the zest, juice of the lime, and salt to the pan and let boil for another 30-60 seconds, or until sauce is clear and no sugar crystals remain. Remove the sauce from the stove and pour over the popped popcorn and the shredded coconut. Toss to coat over every kernel. Serve popcorn at room temperature. *If you like more pucker power, you can add more lime juice. Also, if you boiled your sauce too long and you need to thin it out, extra lime juice works great for that too.
