It’s peach and plum season again which is always one of my favorites. I can’t seem to get enough peach cobblerraspberry peach cobbler, peach cheesecake, peach pancakes, peach pie and anything having to do with fresh peaches. I usually have them ripe from my tree but for some reason my peach tree has a million peaches on it but they are still the size of a golf ball. It is so strange! Has anyone ever had this problem before? The only thing I can think is I sprayed the bug spray too late in the year and I ruined my peaches. I couldn’t be more sad about not having my own peaches, but I guess I am grateful I can price them at Walmart for the best deals in town. Not as good of course, but they will do 😉 My neighbor gave me some of her plums from her tree and so I knew I had to create a recipe that used both the peaches and plums I had on my counter. I found a recipe from America’s Test Kitchen that I adapted and turned into a simpler recipe that turned out great!! It was so fresh, slightly tart and everything I think summer should taste like. If you want a new, delicious summer dessert, this cake is a must try! It would be heavenly warm with vanilla ice cream or I served it with some whipping cream. Both are pure, summerliciousness!

Peach Plum Summer Cake
Ingredients
  1. 2 cups plums, chopped (skins left on)
  2. 1/3 cup panko crumbs
Cake
  1. 1/2 cup sour cream
  2. 1 1/2 sticks butter
  3. 1/2 tsp. almond extract
  4. 2 tsp. vanilla
  5. 1 tsp. salt
  6. 1 1/3 cup brown sugar
  7. 3 eggs
  8. 5 tsp. baking powder
  9. 1 1/2 cup flour
  10. 2 peaches, sliced (skins left on)
  11. 2 Tbls. granulated (for sprinkling on top of peaches)

Instructions
  1. Preheat oven to 425 degrees. Wash and pat dry the plums. Cut plums in half, remove pit and cut plums into quarters. Do this until you have 2 cups of plums (about 10-12 small plums). Add the panko crumbs and stir. Spray a cookie sheet and spread the plums out on the sheet evenly. Place the plums in the oven and bake for 4-6 minutes, or until they are slightly golden and their juices have released. Remove the plums from the oven and change the oven temperature to 350 degrees. In a mixing bowl, combine the cake ingredients and whisk until smooth. Fold in the plums and mix just until incorporated but the batter has streaks of pink plums. Grease a 9x13 pan and and pour the cake batter into the pan.
  2. Cut and slice the peaches into thin strips. Arrange the peaches on the cake so that the cake is covered in peaches. Sprinkle the sugar over the tops of the peaches. Bake the cake at 350 for 50 minutes, or until the center of the cake comes out crumbly. Serve cake with ice cream or whipped topping
