One thing that has actually grown really well in our garden this year is red potatoes. The kids love to go up to the garden and go on a ‘potato treasure hunt’. They are so fun to dig up and find all these beautiful, red potatoes under the soft dirt. With a little rinsing and this simple recipe, you can turn your red potatoes into a really flavorful and easy side dish. These potatoes go perfectly with our homemade meatloaf and any other main dish you can think of.


- 10-12 red potatoes
- 1 packet Lipton Onion packet mix
- 2 Tbls. parsley
- 1 tsp. garlic powder
- 1/2 stick butter, melted
- Rinse the potatoes and cut into one and a half inch pieces. Place on a cookie sheet and drizzle with the melted butter. Sprinkle the onion soup mix, parsley and garlic powder all over the potatoes and toss. Bake the potatoes at 425 for 20-30 minutes, or until golden brown and crisp. Serve warm.
