One of my Dad’s favorite dishes since I can remember is Chicken Tikka Masala. I am a huge fan of curry but for some reason I always thought this dish was a little more in depth and difficult to make. I finally decided to give this dish a try and make it for my Dad. I was shocked at how easy this meal was and the fact it was pretty much a one dish wonder was fabulous for a weeknight meal! Besides the whipping cream (you could use fat free half & half instead or coconut milk if you’d rather), if you serve this dish over brown rice it is very healthy. If you are in the mood to try a new curry dish, give this one a go. It was a hit the day of, and the leftovers were even better! Hope you enjoy 😉

Chicken Tikka Masala
  1. 4 chicken breasts, cut into bite size pieces or long strips
  2. 5 cloves garlic, minced
  3. 1 1/2 tsp. salt
  4. 1/2 tsp. black pepper
  5. 1/2 tsp. cayenne pepper
  6. 2 tsp. garam masala
  7. 1 tsp. cumin
  8. 2 tsp. curry powder
  9. 2 tsp. turmeric
  10. 2 limes, juiced
  11. 2 onions, diced
  12. 1 jalapeno pepper, diced and seeds removed
  13. 1 red or yellow bell pepper, diced small (optional)
  14. 3 Tbls. butter
  15. 1 can (8 oz.) tomato sauce
  16. 2 cans (14.5 oz.) diced tomatoes
  17. 1-2 cups whipping cream
  18. 1-2 Tbls. brown sugar (optional if you like a little sweetness)
  19. 1 bunch cilantro, chopped
  20. Cooked rice

  1. Slice the chicken into thin strips. Combine first 9 ingredients and marinate with the chicken 4-6 hours or overnight (optional--I didn't marinate the chicken at all and it was still great). Saute the onion and jalapeños in the butter until soft. Add marinated chicken and cook about 10 minutes, until partially cooked through. Add the bell pepper, tomato sauce and diced tomatoes. Cook for 30 minutes over medium-low heat with the lid on. Salt and pepper to taste. Add the whipping cream and cilantro just before serving over cooked rice.
