I can’t believe within a month or so, snow flakes will start to fall and pretty soon the idea of grilling out on our grill will no longer be appealing. I have to admit I get a little anxiety this time of year at the thought of the warm, sunny days being over. I love the holiday’s and all, but I have to admit summer is my favorite time of year. I seem to have more energy and am revitalized by the green grass, blue sky, fluffy white clouds and the beautiful flowers everywhere. Summer weather is just the best..in my book anyway 😉

I guess I can rejoice in the fact that fall brings pumpkin desserts, homemade soups, books by the fire and lots of other wonderful things. I guess I need to just embrace fall with all of it’s cooler glory. Until my grill is covered in snow however, I plan on getting at least a couple more weeks use out of it. Before fresh pineapple goes out of season, I wanted to share this really simple recipe that our family loves. On those weekends I’m trying to be a little healthier, one of my favorite sweet treats are these Honey Lime Grilled Fruit. The glaze is just sweet enough to compliment the fresh, sweet fruit and add a little dallop of ice cream on top of these babies and you have a treat everyone will love! Serve with a lowfat vanilla yogurt or gelato and you have a dessert with very little calories and all the flavor and sweetness you crave. Honey Lime Grilled Pineapple or Peaches
  1. 2-3 peaches, pits removed and cut in half
  2. 1 large pineapple, cored, skin removed and sliced into 1/2 inch thick pieces
  3. 1/2 cup honey
  4. 1/4 cup lime juice
  5. 2 Tbls. brown sugar
  6. Dash salt

  1. Prepare the fruit and place on a cookie sheet. In a bowl, whisk together the honey, lime juice, brown sugar and salt. If you need to heat the glaze in the microwave for 10-20 seconds to soften the honey. Use a pastry brush and brush the fruit with a thin layer of the glaze. Heat a grill to medium high heat. When the grill is hot, place the fruit on the grill face down. Let the fruit grill for 2-3 minutes, or until slight char marks are on the fruit. Turn the fruit over to the other side, brush with extra glaze and continue to cook another 3-5 minutes, or until tender. Remove fruit from the grill and serve warm with vanilla ice cream or just as a side dish to any meal.
  2. *Calorie Counter: For one serving of this fruit is only 100 calories. Add a scoop of vanilla yogurt and you have a delicious dessert for under 200 calories. Not bad at all 😉
