What is there not to love about feta, grilled Italian seasoned chicken, fresh vegetables tossed in a lemon yogurt sauce, all wrapped in a warm pita bread. YUM! This dinner is quick, healthy and full of delicious Mediterranean pitas. Simple and delicious weeknight meal.

Mediterranean Chicken Pitas
  1. 1 package pita bread or flat bread
  2. 1 small red onion, sliced
  3. 2 cloves garlic minced
  4. 1 cup white mushrooms, sliced
  5. 1 red bell pepper, sliced thin
  6. 1 Tbls. olive oil
  7. Salt and pepper to taste
  8. 1 cup baby spinach
  1. 4 boneless skinless chicken breasts
  2. 1 Tbls. vegetable oil
  3. 2 tsp. dry Italian seasoning
  4. Juice of 1/2 a lemon
  1. 1/2 cup plain yogurt or sour cream
  2. 2 Tbls. mayonnaise
  3. 2-3 Sriracha sauce
  4. 1/2 lemon, squeezed
  1. 1 cucumber, seeds removed and diced
  2. 1/4-1/2 cup feta cheese
  3. Fresh cilantro, chopped for garnish
  4. 1 tomato sliced thin

  1. Season the chicken breasts with salt and pepper, olive oil, lemon juice and Italian seasoning. Let marinate for a few minutes up to a couple hours. When ready to grill, grill the chicken on medium high heat until the chicken is cooked through. Remove chicken from the grill, slice intothin strips and set aside.
  2. Chop the garlic, sliced red onions, mushrooms and peppers. Set aside. Coarsely chop 1/2 of the cucumber and tomato. Set aside.
  3. For the sauce: combine the yogurt, mayo, juice of 1/2 of a lemon, 1 garlic clove and the Sriracha sauce. Whisk and set aside. Saute over medium heat: peppers, onions, garlic, mushrooms until lightly golden brown. Add the spinach to slightly wilt.
  4. Warm the pita bread or flatbread in the microwave for a few seconds until warm. Add the sliced chicken onto the bread, the sauteed vegetables, sauce and garnish with tomatoes, cucumbers, feta and cilantro.
