For one of these apples it is less than 150 calories, and yet as satisfying as a buttery sweet apple dessert. Not to mention 2 grams of protein and 5 grams of fiber. A fabulous way to start your morning! The other bonus of this recipe is these baked apples cook in three minutes. They are so quick to throw in the microwave right before the kids have to leave for school, or if you need to run out the door. When they are done cooking, you get this soft, warm apple with lots of crunchy, brown sugar crumble that seeps into the warmed apple. - 1 cup almonds
- 2-3 Tbls. butter (optional)
- 1 tsp. cinnamon
- Dash nutmeg
- 3/4 cup brown sugar (or less if you want less calories)
- Dash salt
- 2 cups oats
- 2 Tbls. milled flax seed
- 20-30 apples (cook one at a time)
- Rinse the apple. Cut the apple in half and scoop out the center seed/core of the apple and the end stem pieces. Place the two apple pieces onto a microwave safe bowl or plate. For the crumble, combine all of the ingredients into a food processor and pulse until the ingredients are well combined and chopped. Sprinkle one tablespoon of crumble onto the top of each apple. Microwave the apple for 3 minutes. Remove from the microwave and sprinkle with extra crumble if you like. Serve warm. Also great with vanilla ice cream on top 🙂
