Now, let’s talk about a dessert that is much more sophisticated than a candy bar. I can pass on candy all day long, but you serve me a piece of this Pumpkin Bread Pudding and I will be in Halloween Heaven! I actually had this bread pudding for my birthday and it made me speechless. It was everything I’ve ever wanted in a dessert, especially this time of year. Moist, soft bread pudding, a hint of pumpkin, warm spices, all smothered in a caramel syrup and candied nuts. Ah, man! My mouth is watering just remembering how great it was. I decided this bread pudding will be showing up on our Thanksgiving table. Way better than pumpkin pie in my book 😉 Hope you love it too and have a great Halloween celebration!

Pumpkin Bread Pudding with Caramel Sauce
Bread Pudding
  1. 1 15 oz. can pumpkin
  2. 2 pints whipping cream
  3. 1 1/2 cup sugar
  4. 6 eggs
  5. 1 tsp. salt
  6. 10 cups bread cubes, baked or dried
  7. 2 tsp. vanilla
  8. 1 1/2 tsp. cinnamon
  9. 1/2 tsp. all spice
Caramel sauce
  1. 1 stick butter
  2. 3 cups brown sugar
  3. 1 pint whipping cream
  4. 1 tsp. vanilla
  5. 1/2 tsp. salt

  1. Grease a 11x14 pan with butter (heavily) and place inside the cubed bread. Mix the other ingredients together and pour over bread. Cover with tin foil and place in the pan. Bake at 350 for 30 minutes, or until the center of the pudding is slightly set. Remove the tinfoil from the pan and bake an additional 10-15 minutes, or until the center of the pudding is solid and no longer wet. Remove the pudding from the oven and let rest for a few minutes before serving. Serve pudding with extra whipped cream, caramelized nuts and drizzle with the caramel sauce.
  1. Place all of the above ingredients together in a sauce pan and bring to a low boil. Simmer for 3-5 minutes, or until smooth and the sugar is dissolved. Remove from the heat and set aside until ready to serve.
