Have you heard of Golden Mashed Potatoes before? I found a recipe similair to this one several years ago and have been making it every fall since. The recipe is simple. It’s just a basic mashed potato recipe but with sweet potatoes in place of some of the potatoes. It seems slightly odd, but it is actually really good. The sweet potatoes add a slight sweetness to this dish that balances out all of the garlic and savory aspect of the potatoes. Not only is there a better depth of flavor compared to traditional mashed potatoes, but the color is really beautiful. The golden, orange color is so pretty on a plate with stuffing, turkey or any main dish you wish to serve these with. Even my husband who refuses to eat sweet potatoes (shameful, I know ;), had to admit that he loved this recipe. It was hard for him to admit to, but he did..and for good reason. Golden Garlic Mashed Potatoes
  1. 3 large yams or sweet potatoes
  2. 6-7 red potatoes
  3. 1 cup milk
  4. 1 stick butter
  5. 2-3 tsp. salt
  6. 1 tsp. garlic powder
  7. 1 tsp. black pepper
  8. Dried parsley, garnish

  1. Fill up a soup pot 3/4 of the way with hot water. Scrub the sweet potatoes extremely well until the skins are thin and clean. Cut off any thick or blemished spots on the sweet potatoes. Cut the sweet potatoes into one to two inch pieces. Place the pieces of the sweet potato into the pot with water. Scrub the red potatoes as well until nice and clean. Cut the potatoes into the same size pieces as the sweet potatoes and place into the pot. Turn the pot to high heat and bring the water to a rolling boil. Continue boiling until the potatoes are tender. When the potatoes are soft, drain the water and keep the potatoes in the pot. With a potato masher or electric mixer mash the potatoes until soft and fluffy. Add the remaining ingredients to the potatoes and season to your liking. Serve warm off the stove.
