This may be a little dramatic but I’m not kidding when I say your Christmas will not be complete with out these pancakes! Everything about these pancakes screams Christmas time all put together on one little plate. If you have yet to have decided what you are eating for Christmas Breakfast, may I recommend this recipe! Let’s just say, I made these 15 minutes ago and could hardly wait to come in on my computer and share this recipe with you. That is when you know a recipe is a keeper!! I am so excited for you to try these. The Egg Nog in the pancakes make them the most fluffy, soft and delicious pancakes you’ll ever have. And add this heavenly Cranberry Orange Syrup on top and you just want to smell and eat these all season. Your house will smell as amazing as these pancakes taste. Egg Nog Pancakes with Cranberry Syrup
  1. 4 cups egg nog (1 quart)
  2. 4 eggs
  3. 1/3 cup canola oil
  4. 1/4 cup sugar
  5. 1 tsp. vanilla
  6. 2 tsp. baking soda
  7. 4 tsp. baking powder
  8. 1 1/2 tsp. salt
  9. 4 cups flour
Cranberry Orange Syrup
  1. 12 oz. fresh cranberries
  2. 1 1/2 cups sugar
  3. 1/4 cup butter
  4. 1/4 cup water
  5. Juice of 2 oranges
  6. Zest of 1 orange
  7. 1/2 cup dried craisins
  8. Dash of salt

  1. Pancakes: In a large mixing bowl, whisk together the egg nog, eggs, oil and sugar together until smooth. Add the remaining ingredients and continue to whisk until the batter is combined. Heat a griddle to medium high heat. Spray the griddle with cooking spray or spread a little butter on the pan. Pour a 1/4-1/3 cup of batter onto the griddle. Cook the pancakes until lightly golden brown and then flip to the other side. Cook on the other side for a couple more minutes and then remove the pancakes and serve with the cranberry syrup.
  2. Syrup: Place all of the ingredients into a sauce pan. Bring to a low boil and let the cranberries soften and break down. Simmer until the syrup is as thick as you would like. Serve the syrup over the pancakes.
