Merry Christmas Eve everyone! If you are still in search of a Christmas breakfast or brunch recipe that your entire family will go crazy over. I have a recipe we made yesterday that I am so excited to share with you. After the Egg Nog Pancakes we made last week (that were amazing!), I thought I would make up a french toast casserole with egg nog. It was a hit! It has every flavor we love about this season all in a casserole that comes together in less than 15 minutes. You can even keep this french toast in the fridge overnight so it’s ready to bake as soon as you wake up. Hope you love it like we did 😉

  1. Spray a 9x13 heavily with cooking spray or melted butter. Cut the bread into cubes and place in the pan. In a bowl, whisk together the egg nog, milk, eggs, vanilla, syrup and cinnamon until smooth. Pour this mixture over the bread, trying to get every piece of the bread covered with the mixture. Cover the casserole with tinfoil until ready to bake. This can keep in the fridge over night if you wish, or be baked right away.
  2. Right before putting in the oven, put together the topping ingredients in a bowl and mix together. Sprinkle this mixture over the top of the bread. Put tinfoil back over the casserole and bake at 350 for 40-45 minutes, or until the bread is soft, but not soggy. Remove the tinfoil for the last few minutes of baking to help the top get nice and golden brown. Remove from the oven and serve with more syrup and/or whipping cream.
