Every Christmas Adam (the day before Christmas Eve) we always have a yummy Fondu dinner. I made this Spicy Queso Dip that we dipped bread and tortilla chips in. It was amazing! We couldn’t eat it fast enough it was so good. If you want a really simple dip recipe for your appetizer parties this weekend, this one is a keeper for sure!


- 1/4 cup flour
- 1/2 stick butter
- 8 oz. whipping cream
- 1 cup salsa
- 1 cup shredded colby jack cheese
- In a sauce pan, melt the butter on medium heat. Once the butter begins to melt, add the flour and whisk together until creamy and smooth. Continue to cook the roux and then add the whipping cream. Cook on medium-low heat until smooth and the sauce thickens. Add the salsa and shredded cheese. Continue to simmer on low heat until the cheese is melted. Season with salt and pepper if needed. If the sauce gets too thick, add a little milk or more salsa to thin out to your desired consistency. Serve with tortilla chips or pieces of bread.
