There is something about feta cheese that I just love. I love the creamy, smooth texture along with the tang. Combine feta on a salad with a lemony dressing and you have me sold before I even taste it! I have been trying to incorporate more vegetables into my families diet, and this Greek Salad was a huge hit for all of us! If you are looking for a main dish salad, you could always add diced chicken and this salad would make for a perfect, light dinner option. Pretty much this dressing could go on any salad, but add these ‘Greek-style’ ingredients and you have a fresh, delicious salad everyone will love 😉 Enjoy!

Greek Salad with Lemon Dijon Dressing
  1. 1 large head romaine, chopped
  2. 1 cucumber, diced
  3. 1 cup cherry tomatoes, halved
  4. 1 cup croutons
  5. 1 cup feta cheese, crumbled
  6. 2 hard boiled eggs, cooked, peeled and sliced (optional)
  7. Diced chicken (optional)
Salad Dressing
  1. 2 lemons, zested and juiced
  2. 1/2 cup olive oil
  3. 1/3 cup white sugar
  4. 1/4 cup Dijon mustard
  5. 1 tsp. oregano
  6. 2 cloves garlic, minced
  7. Pinch of rosemary
  8. Salt and pepper to taste

  1. Chop and prepare all of the salad ingredients. Place in a large salad bowl. For the dressing, add all of the ingredients into a food processor and pulse until smooth and creamy. Or, whisk vigorously to incorporate the lemon and olive oil together until smooth. Serve the dressing over the salad.
