Blog surfing this time of year will inevitably have you drooling over every appetizer and ‘game-day’ food to get you ready for the super bowl this weekend. My husband and I couldn’t be more boring when it comes to the super bowl. We drive my teenage boy son crazy, and he is so disappointed in us that we don’t even know who’s playing. We will most likely not even watch the game, but that doesn’t mean we can’t enjoy lots of yummy appetizers that night anyway 😉 Last Superbowl we watched a cute religious movie about football (Facing the Giants) and had lots of yummy appetizers. I’m sure to my teenagers it wasn’t as ‘cool’ as watching the Super Bowl, but we still had a great time! If you need some game-day recipe ideas, this BLT Avocado Dip is a must-make. My family loves this guacamole and it is great plain, on chips, in lettuce as a wrap or on any of your favorite sandwiches or burgers. The saltiness and crunch of the bacon takes this guacamole to a whole new level! Tomorrow I will share with you some Turkey Sliders that would be AWESOME for any upcoming parties… and of course they are smothered in this yummy guac! Stay tuned 😉

BLT Guacamole Dip
  1. 3 avocados, peeled and seed removed
  2. 2-3 Tbls. red onion, chopped very fine
  3. 2 roma tomatoes, diced small
  4. 1/2 lb. bacon, cooked and crumbled
  5. 1/2 tsp. salt, or more to taste
  6. 1/2 tsp. garlic powder
  7. 1/2 tsp. black pepper
  8. Juice of 1/2 of one lime
  9. Lettuce leaves for wraps or tortilla chips
  10. Fresh cilantro for garnish

  1. In a saute pan, cook the bacon on medium-high heat until the bacon turns crispy and is cooked through. Remove the cooked bacon and let drain on a paper towel until cooled. Crumble the bacon and set aside. Peel and remove the seed of the avocados. Scoop out the flesh of the avocados into a bowl. Mash the avocado and add the juice of half of a lime. Chop the red onion and tomatoes into small pieces. Add to the avocado and mix. Add the bacon and then season with salt, pepper and garlic powder to your liking. Serve the dip with tortilla chips, on lettuce or on any burgers or sandwiches.
