During the week, I am all about quick dinner recipes that help get our family together around the dinner table, without a lot of effort. The other day I had thawed out a few pounds of beef and turkey and would not decide for the life of me what I wanted to make with it. I wanted to come up with a new recipe but was craving sloppy joes. I decided to take a traditional sloppy joe recipe and give it a Mexican flair with some chipotle and taco seasoning. We then served these ‘sloppy joes’ on a bun with a chipotle mayo (yum!) and some avocados, cilantro and pepperjack cheese. The overall combination was really delicious and a nice change from tacos or sloppy joes. Put the two together and you get these Chipotle Taco Joes and your family will be in love, just like we were 😉 Enjoy!


- 3 lbs. ground beef (or half beef and half turkey)
- 1 red onion, chopped small
- 1 tsp. garlic powder
- 1 Tbls. chili powder
- 1 Tbls. cumin powder
- 2 tsp. taco seasoning
- 1 tsp. black pepper
- 1 tsp. salt
- 6 oz. tomato paste
- 1/2 cup can diced tomatoes
- 3-4 diced chipotles
- Hamburger buns
- Avocados, sliced
- Sliced pepperjack cheese
- Cilantro, chopped (optional garnish)
- 1/2 cup mayonnaise
- 2-3 chipotle peppers in adobo sauce, chopped fine
- For the mayo, combine the mayonnaise and chipotle peppers and serve on the buns. Slice the avocados, cheese and chop the cilantro. In a saute pan, add the chopped onion and bring pan up to medium-high heat. Add the ground beef/turkey to the pan and break apart with a wooden spoon until crumbled. Add the remaining ingredients and let simmer on low-medium heat until cooked through and seasons combine. If the meat is too dry, you can always add extra diced tomatoes if you would like. Serve the warm meat on a hamburger bun with the chipotle mayo, sliced avocados, cheese and fresh cilantro for garnish.
