I am sad this picture didn’t turn out better, because this dessert was seriously dreamy. I have never made a chocolate bread pudding before, so this to me opened up a whole new world of possibilities of bread pudding. I am a HUGE bread pudding fan and this recipe took it over the top for me. What is there not to love about cherries and chocolate together? Really anything with chocolate is fantastic, but combine a tart cherry and milk chocolate and you have me at hello. Next time you are craving a rich, satisfyingly delicious dessert, this is one you will want to keep on hand! Hope you enjoy 🙂

Cherry Chocolate Bread Pudding
Ingredients
  1. 1 loaf dried French bread, cut into one inch cubes
  2. 1/3 cup cocoa powder
  3. 1 can cherry pie filling (20-21 oz.)
  4. 2 tsp. vanilla
  5. 1 cup sugar
  6. 2 cups milk
  7. 4 eggs
  8. 1/8 tsp. salt
  9. 1/2-1 cup dried tart cherries
  10. 1/2 (12 oz.) bag chocolate chips
  11. Vanilla ice cream

Instructions
  1. In a 9x13 pan, spray or grease the bottom and sides with butter or cooking spray. Cut a French bread loaf (preferably dried french bread) into one inch cubes. Place the pieces of bread onto the bottom of the baking dish. In a bowl, combine the cocoa powder, vanilla, sugar, milk, eggs and salt together. Whisk until smooth. Stir in the dried cherries and pie filling into the milk mixture. Pour the milk mixture over the dried bread. Sprinkle the chocolate chips (I liked the mini chips rather than the regular sized chips) over the top of the bread. Cover with foil and bake the bread pudding at 350 for 55-65 minutes, or until the bread pudding is soft in the center, but not wet and soggy. If you like a crispier topping, remove the foil for the last 5-10 minutes of baking to get it a little crispy on top. Serve with extra pie filling and vanilla ice cream on top. You can also add caramel if you want to be really over the top 😉
