Is it just me, or do you get a funny sense of accomplishment when you can turn leftovers into a second meal? Tonight I was having fun visiting with neighbors and enjoying the warm weather and kind of forgot to think about dinner before it was too late. I realized I had extra of that awesome Honey Lime Cilantro Dressing from our taquitos last night and decided to whip up a healthy salad for our dinner. It wasn’t anything fancy, just a bunch of produce I had in my fridge (spinach, romaine lettuce, bell peppers, avocados, grape tomatoes, etc.) and then some frozen corn and canned black beans. I threw it all together in a large salad bowl, served with the leftover dressing and we were all happy as could be! No one was the wiser that I neglected my motherly duties and had a little Mom-time, which was lovely. Even I was shocked to have such a healthy, homemade meal come together in only a few minutes. And let me say, that dressing was great on the taquitos and it was even more amazing on this salad! A simple, healthy way to turn one recipe into two.
