The other night I was scrounging to find a meal to make that required little effort on my part. I had some cooked and shredded chicken in my freezer and so I warmed that up, added some Sweet Baby Ray’s Chipotle Raspberry BBQ Sauce, mashed up some avocado with lime juice and topped it off with some chipotle mayo. There was nothing fancy about these little sliders, but they were SO good, and took a boring bbq chicken sandwich up a notch. If you’re looking for a quick and easy meal idea, these sliders are perfect for summer because you don’t need to use the oven and heat your house! The other great thing, is all of the ingredients for this meal are on sale this week–chicken, bbq sauce, avocados, mayonnaise, etc. For this entire meal, it cost well under $8 to feed our family of 7. BBQ Avocado Chicken Sliders with Chipotle Mayo
  1. 4-5 boneless chicken breasts, cooked and shredded (crock pot works great)
  2. 18 oz. jar of your favorite bbq sauce (bbq with chipotle works great with these)
  3. 2-3 avocados, seed removed and mashed
  4. 2 Tbls. lime juice added to the avocados
  5. 1 cup mayonnaise
  6. 2-3 chipotle peppers in adobo sauce (you can freeze the extra ones in the can for later)
  7. 12-15 rolls or 6-8 hamburger buns
  8. Sliced pepperjack cheese (optional)

  1. Cook the chicken as desired (you can grill, crock pot or bake until chicken is tender and can be shredded). Shred the chicken and add the bbq sauce to the chicken until thoroughly coated. If you like a little spice to your chicken, you can chop extra chipotle peppers really fine and add to the chicken. For the avocados, remove the seed and skin and then mash, leaving large pieces of avocado. Stir in some lime juice so the avocado doesn't go brown. For the chipotle mayo, chop the chipotle peppers very fine and stir into the mayonnaise. If you like a lot of spice, add more than 2-3 peppers. Spread a generous amount of the mayo on a bun, top with the sliced cheese (optional), shredded chicken and avocados. Serve warm. Serves 6-8 people.
