Well, four kids off to school and one left to go tomorrow. This has been such a silly ‘back to school’ marathon for our family. With five kids with five different schedules, it has been several weeks of ‘back to schooling it’ for our kiddos. This morning I had to say goodbye to our oldest, darling girl. I will miss her around our home! She is such a ray of sunshine for our family and I will really miss all of them this go round. I have to admit I really like it as my kids are getting older. Yes, there can be teenage drama, but I love having these big kids I get to hang out with and be friends with. I think it’s the first time in my mothering “career” that I am legitimately SO sad summer is coming to an end. We made some great memories though and I will hold onto those as we go forward with a quiet house 😉 Good thing the 3:00 rush comes and we’re all back in the saddle again and onto the night time crazy-time that we all love so much! Ha. Well, if you are in need of a healthier-after school snack, these Apple Pie Oatmeal Cookies are super fun and different! We have apples coming off our tree like crazy, so I wanted a way to use them up. These cookies are fairly low in sugar (compared to a regular cookie) and have some good, whole grain goodness to help fill the kids up. It’s a win-win for all of us and if we ever run out of time for breakfast, I froze several of these to feed them on the way out the door. Who wouldn’t love a cookie for breakfast? I know I would! Healthy Apple Oatmeal Cookies
  1. 1 cup brown sugar (or use Stevia or Agave Nectar)
  2. 1 stick butter (or coconut oil)
  3. 3 eggs
  4. 3/4 tsp. salt
  5. 3 tsp. baking powder
  6. 3 tsp. cinnamon
  7. 2 1/4 cup flour (can use whole wheat flour)
  8. 1 Tbls. cornstarch
  9. 3 cups instant oats
  10. 2 1/2 cups apples, diced small or grated (keep skins on)
  11. 2 Tbls. milled flax seed (optional)
  12. 1-1 1/2 cups butterscotch or cinnamon chocolate chips (optional)

  1. Preheat an oven to 350 degrees. In a mixing bowl, with an electric mixer, blend together the sugar and butter until smooth. Whisk for 1-2 minutes on medium-low speed. Then add the eggs, salt, baking powder and cinnamon and continue to mix until smooth. Chop the apples into small pieces and add to the batter. Mix until apples are incorporated. Add to the batter the cornstarch, flax seed, oats and flour and continue to mix until flour is no longer visible and the batter is all combined. If you are adding chocolate chips, add those as well and mix. On a cookie sheet, spread with parchment paper and place 9-12 cookie dough balls evenly spaced apart. The dough will be slightly soft (especially if you're using agave--you might a little more flour to keep the cookies holding together), so you can just scoop the dough onto a pan and bake for 7-9 minutes, or until cookies are cooked through, but not crispy. You don't want to over bake the cookies or they won't taste as great. Serve the cookies warm with milk for a great snack.
