I just realized it was the first day of fall a couple of days ago and I haven’t even posted a pumpkin recipe yet. How dare I? When deciding what to post about first this fall, I thought I would share a ‘Flashback Friday’ recipe for our family’s favorite Pumpkin Waffles. These waffles I have been making since I was a young girl and they continue to be one recipe all of my children love. They just happened to be my 14 year old sons request for his birthday breakfast this week. They are everything you love about fall pressed into one, delicious waffle! I hope you enjoy.

 

Pumpkin Waffles
Ingredients
  1. 3 eggs
  2. 1 pound can of pumpkin (15-16 oz. can)
  3. 1/2 cup vegetable oil
  4. 1/2 cup water
  5. 2 ½ cup flour (I use half wheat and half white flour)
  6. 1/2 cup sugar (or more if you like it more sweet)
  7. 1 ½ tsp. baking soda
  8. 1 ¼ tsp. salt
  9. 3/4 tsp. nutmeg
  10. 1 tsp. cinnamon

Instructions
  1. In a large mixing bowl, whisk together all of the wet ingredients. Once that is mixed, add all of the dry ingredients. Once the batter is smooth, prepare to make the waffles. Heat a waffle iron to medium heat. Spray the waffle iron heavily with cooking spray. Pour scoopfuls of the batter into the waffle maker. Cook until the waffle is golden brown. Remove the waffle and serve with whipping cream and/or syrup.
