My friend Emily had us over for lunch awhile ago and served us the most amazing lunch I’ve had in a long time. She loves finding new recipes for us to try and these Chicken Cabbage Pita Sandwiches are SO delicious! I love the crunch of the apple, the sweetness of the cranberries, the smoothness of the avocados, the diced chicken and tangy blue cheese dressing. Not to mention sweet grapes and tomatoes. What a mouthful of flavors! The next time you need a healthy, new recipe for a ladies lunch or a quick dinner, this is the recipe for you. Enjoy 🙂

Chicken Cabbage Pita Sandwiches

Ingredients
1 bag shredded cabbage mix (or 1/2 head green cabbage)
3 cups shredded or diced chicken breasts
1 cup red grapes, halved
1 cup grape tomatoes, halved
1/2 cup dried cranberries
1/2 cup mozzarella cheese, shredded
1 granny smith apple, diced
2 avocados, diced
T-Mezzetti Blue Cheese Vinaigrette

Instructions
In a large bowl, combine the cabbage, chicken, grapes, tomatoes, craisins, cheese, apple and avocado. Pour the blue cheese vinaigrette over the salad and toss. Sever inside the pitas and eat cold.
Deeee-lish…and tastes so healthy! I didn't have that kind of Blue Cheese dressing but used what I had–Kraft Roka…added a little fresh blue cheese and it was wonderful…didn't even have grapes but there was so much flavor, I didn't miss them. I will definitely use this recipe again…I used the Costco Asian Cabbage salad mix…wonderful way to use many items up out of the fridge! Thanks Emily and Shan!
