My friend Emily had us over for lunch awhile ago and served us the most amazing lunch I’ve had in a long time. She loves finding new recipes for us to try and these Chicken Cabbage Pita Sandwiches are SO delicious! I love the crunch of the apple, the sweetness of the cranberries, the smoothness of the avocados, the diced chicken and tangy blue cheese dressing. Not to mention sweet grapes and tomatoes. Chicken Cabbage Pita Sandwiches
  1. 1 bag shredded cabbage mix (or 1/2 head green cabbage)
  2. 3 cups shredded or diced chicken breasts
  3. 1 cup red grapes, halved
  4. 1 cup grape tomatoes, halved

  1. In a large bowl, combine the cabbage, chicken, grapes, tomatoes, craisins, cheese, apple and avocado. Pour the blue cheese vinaigrette over the salad and toss. Sever inside the pitas and eat cold.
