It’s the weekend and I couldn’t be happier! What a busy week. Not sure what it was about this week, but I’m just so relieved it’s the weekend and we can sleep in and slow down life a little 😉 A delicious, healthy, homemade breakfast sounds like the perfect plan for a lazy Saturday morning, doesn’t it? Well, I wanted to share a couple of my favorite healthy pancake recipes with you that have been favorites in our home for a couple years now.
First off, these Apple Wheat Pancakes are fantastic! I debuted these on a local cooking show 5 years ago, and they continue to be a favorite recipe of our families. Apples are in season, so it’s a great time to top your pancakes with some fresh, cinnamon apples. Yum! Add the Cinnamon Butter Syrup (yes, not so healthy–but sure a nice treat) and you have a breakfast that will warm your heart and soul on a cold day.
If you are like me and trying to cut back on your carbs, these Brown Rice Blender Pancakes are an awesome way to start your morning. They are gluten free and have a super fun, dense, spongy texture that is unlike any pancake you’ve ever had. They are really fun to eat and topped with real maple syrup and some fresh berries is my favorite way to enjoy these. Healthy, easy and a recipe your whole family will love! Enjoy 🙂
