Before the weekend comes and you are all busily planning your Game Day-Super Bowl Menu, I wanted to share another amazing appetizer recipe! Hands down, the most popular appetizer on our blog is for our Candied Tomato Cream Cheese Baguettes–and it’s no wonder, they are FABULOUS! Well, the other day I was at a restaurant and they had a Red Onion Balsamic Jam they were spreading on some homemade bread. I about fell off my chair with glee. The flavors were out of this world. Savory, sweet, a little tangy and oh, so yummy!
I knew I had to go home and recreate this sandwich and jam. I decided to throw this balsamic red onion spread over baguette toast with a smear of cream cheese and the combo was a perfect 10! The next day I had leftovers of the jam (which you will want as well) and I threw it on a bagel sandwich with some grilled chicken, a slice of pepperjack cheese and arugula. How do you spell….YUM!?!? If you want a simple, appetizer (or dinner) recipe that will wow your friends and family, this is the one for you! Hope you love this recipe and have a great last few days of the week 😉
- 2 Tbs. butter
- 2 large red onions, sliced thin
- 4 garlic cloves
- 1/4 cup balsamic vinegar
- 1 tsp. salt
- 1 cup sugar
- 1 baguette loaf
- 8 oz. cream cheese
- Slice the red onions into thin strips (or dice). Heat a saute pan over medium-high heat and add the butter to the pan. Heat the butter adn then add the red onions. Let the onions sweat, and saute until tender and soft. Add the garlic cloves, balsamic vinegar, salt and sugar to the pan. Continue to let the mixture come together and then turn the heat to medium heat. Let the mixture simmer on a low boil for 10-12 minutes, or until the mixture begins to thicken and the onions are completely soft. At this point you can puree the mixture, or keep the onions in long strips--whatever you prefer.
- For the baguette bread, cut a long, thin baguette into half inch slices. Spread a layer of cream cheese on the tops of each piece of bread. Add a teaspoon or so, of the balsamic onion mixture to each baguette bread. Place the bread onto a cookie sheet in a single layer. Bake the bread pieces at 350 for 5-8 minutes, or until the cream cheese begins to soften and the bread gets a little golden brown. Serve the bread warm (or cold).
