I know I am totally on an orange kick lately, but I keep buying these boxes of oranges from our friend, and I can’t seem to get enough! I find myself searching the internet for delicious orange recipes and can’t help but play around in the kitchen. Should I be cleaning my toilets or scrubbing my baseboards? Probably..ugh! But, the procrastinator in me ends up baking in the kitchen instead. Yes, I have a problem 😉 However, there is something about a sweet, moist, orange cupcake with some fluffy, orange infused chocolate frosting that just makes me happy. My cute nephew broke his arm and requested a cupcake to help him feel better–how do you say no to that? These cupcakes were a Caleb creation and I have to say they were pretty amazing. If you want a new, fun cupcake combination, you can’t go wrong with orange and chocolate. Hope you enjoy 😉

  1. In a bowl, add the canola oil and buttermilk. Zest two oranges and then juice 3-4 oranges into the bowl (need 1 1/2 cup). Whisk the oil, milk and orange juice together until combined. Add the eggs, sugar, sour cream and vanilla and whisk until smooth. Add the flour, one cup at a time and then the baking powder and salt. Preheat an oven to 350 degrees. Line 24 cupcake tins with cupcake liners. Fill each muffin tin with the batter. Bake for 15-18 minutes, or until the cupcakes are cooked through. Remove from the oven and let cool on the counter while you make the frosting.
  2. For the frosting, in a mixing bowl, with an electric mixer, whip the butter until it is light and fluffy. Add the cocoa powder, orange juice, orange zest and the dash of salt. Whip until smooth. Add the powdered sugar until the frosting is nice and fluffy, soft and thick enough to spread on the cupcakes. Pipe or spread the frosting onto each cupcake and serve.
