Funny enough, I think this Mother’s Day the men are grilling up the ladies in our family some homemade hamburgers and hot dogs. I have to admit it might not be my first choice, but if I don’t have to cook–I’m totally okay! Not to mention, I really do LOVE homemade burgers. I am sharing this recipe with Todd so he can grill us up these Southwestern Beef Burgers with Chipotle Mayo. My rules with hamburgers are they have to have plenty of flavor, plenty of fixings and enough sauce that the burger is dripping as I eat it. I love sauce! So, this chipotle mayo is the perfect combination with the slightly spicy hamburger, pickled jalapeno peppers, tomatoes and pepperjack cheese. Yum! My mouth is watering already. Southwestern Beef Burgers with Chipotle Mayo
Burgers
  1. 2 lbs. ground beef (or ground turkey)
  2. 1 egg
  3. 1/2 cup breadcrumbs
  4. 1 Tbs. montreal steak seasoning
  5. 1/4 cup salsa
Fixings
  1. Sliced pepperjack cheese
  2. 1 avocado, sliced (or guacamole)
  3. 2 tomatoes, sliced
  4. 1 red onion, sliced
  5. 1/4 cup pickled jalapeno peppers (or fresh)
  6. 6-8 pieces of lettuce
  7. 6-8 hamburger buns
Chipotle Mayo
  1. 3/4 cup mayo
  2. 2-3 chipotle peppers in adobo sauce

Instructions
  1. For the hamburgers, in a bowl mix together the ground beef, egg, breadcrumbs, Montreal steak seasoning and salsa. If you like more spice in your burgers, you could also add some red pepper flakes. Once the mixture is combined, form the hamburgers into 1/4 pound patties. Heat an outdoor grill to medium-high heat. Place the patties onto the grill and cook until they are browned on both sides and cooked in the center. While the hamburgers are grilling, prepare the chipotle mayo by mixing the ingredients together until smooth. Slice the tomatoes, slice the lettuce, red onion, etc. Right before the hamburgers are done, add a slice of pepperjack cheese to the tops of each burger and let it melt slightly. Place a good portion of the chipotle mayo onto the hamburger bun. Add the cooked hamburger, and then top with the lettuce, tomatoes, red onion, jalapeno peppers and avocados. Serve.
Notes
  1. HEALTHIER OPTION: Serve bun-less or on a whole wheat bun. Omit the mayo or use fat free mayo. Use ground turkey instead of beef.
