Doesn’t this cake look amazing? My nephew had a birthday last week and created this ice cream cake combination that we all couldn’t get enough of. It was heaven on a plate! We took our Ultimate Chocolate Cake recipe that I shared with you yesterday and layered that with mint chocolate chip ice cream, crushed Oreo cookies and whipping cream to top it off. What is not to love about that?! Well, okay, we did drizzle hot fudge on top. How yummy is that? The best part about this cake is it was SUPER easy to put together. And the entire cake cost under $6, where as a cake like this could cost as much as $50 at a local ice cream shop. Double Layer Chocolate Mint Ice Cream Cake
Ingredients
  1. 1 recipe Ultimate Chocolate Cake recipe (or use a regular chocolate cake mix
  2. 1/2 gallon mint ice cream
  3. Whipping cream or Cool Whip
  4. 1 package Oreo cookies
  5. Hot Fudge (optional)

Instructions
  1. Make the chocolate cake recipe as directed and pour into two greased and floured 9 inch rounds (you might have a little extra cake batter to make a few cupcakes so the batter doesn't over flow). Bake the cakes until firm in the center, remove from the oven and let rest for a few minutes to cool. Cut around the sides of the cake pan and remove the cake from the pan and place on a plate. Get a spring form pan and spray the bottom and sides with cooking spray. Place one of the cake rounds on the bottom of the spring form pan. If you like a lot of Oreo cookies, crush up some cookies and pour a thin layer of them on top of the cake layer. Take the ice cream from the freezer and let it soften for a few minutes. Once it is slightly soft, scoop half of the ice cream onto the first half of the cake. Spread the ice cream out evenly on top of the cake. Place the other half of the cake on top of the ice cream. Add the rest of the ice cream on top of the second layer of cake. Press firmly to help make sure there are no air pockets. Put a layer of saran wrap on top of the cake and put back in the freezer. When ready to serve, use a knife and cut around the edges of the cake. You might need to put the knife in hot water to help loosen the ice cream and cake from the sides of the spring form pan. When it's ready, unhook the spring form pan to loosen the cake. Remove the sides of the pan. In a separate bowl, whip together the whipping cream until stiff peaks form. Spread a layer of the whipping cream on top of the cake. Top the cake with additional chopped Oreo cookies and hot fudge as desired.
