I’m excited to share this week’s Friday Flashback recipe with you for these Stuffed Feta Burgers. I made these first six years ago and have loved them many times since. I am a huge fan of feta cheese and then you add that to a juicy, moist, beef burger with a cool, cucumber sauce, you have a delicious burger for any day of the week. Hey, it is Memorial Day next week, right? This burger would be a perfect addition to your weekend’s menu 😉 They are SO yummy!! Enjoy.

 

Stuffed Feta Burgers
Ingredients
  1. 2 lbs. lean ground beef (ground turkey would also work great)
  2. 1 Tbs.Montreal Steak Seasoning
  3. 2-3 Tbs. Worcestershire sauce
  4. 1 tsp. garlic powder
  5. 2 tsp. dried parsley
  6. 1 egg
  7. 1/4 cup breadcrumbs
Burgers
  1. Lettuce pieces
  2. Tomatoes, sliced
  3. 1/2 red onion, sliced
Cucumber Yogurt Sauce
  1. 1/4-1/3 cup mayonnaise
  2. 1/4 cup sour cream
  3. 2 tsp. dried dill weed
  4. 1/2 tsp. garlic salt
  5. Dash of lemon juice
  6. 1 small cucumber, peeled, seeds removed and shredded
  7. Ground pepper
  8. 1/2 tsp. parsley
  9. Salt to taste

Instructions
  1. Large chunk of feta cheese (I prefer the Greek Feta that is sold at Costco in a large square block--it is softer and has better flavor. Feta freezes well if you won't use up the whole package).
  2. 1 package hamburger buns (or homemade) Brush each side with a little olive oil or butter and broil for 30 seconds to a minute until golden brown.
  3. Mix all together (minus the feta) and form half of the mixture into 7 patties. Put a large chunk of feta cheese on top of each half of the patties. Put the remaining beef mixture flattened on top of each patty, covering the feta cheese. Grill burgers until cooked through on the grill.
  4. Serve burgers on a hamburger bun with lettuce, tomatoes, and cucumber sauce. For the cucumber sauce, mix together all of the ingredients and chill until ready to serve with burgers.
Notes
  1. HEALTHIER OPTION: Serve bun-less or on a whole wheat bun. Use ground turkey instead of beef for fewer calories.
