For those of you that missed our apricot syrup from yesterday’s post, you’ll want to make up a HUGE batch of this syrup to have in your fridge. We have used it over pancakes, put it in some muffins, and have now loved having it in a smoothie. It was a hot summer day and the kids were wanting a snack. We decided to make an apricot version of an orange Julius. The combination was SO delicious and refreshing. I can’t wait for you to give these a try and love sipping on this cold drink as you enjoy the last few days of summer before kids go back to school (here in Utah anyway–gotta love the track system). *These smoothies work great in a Blendtec blender (I couldn’t live without mine). If you have a smaller blender, half the recipe to make sure everything fits.
- 1 1/2 cup apricot syrup
- 1-2 cups of ice cubes
- 3-4 cups milk
- 2 tsp. vanilla extract
- 1/2 cup sugar
- Blend all of the ingredients together in a blender until smooth. Adjust sugar as desired. Serve cold.
