Nearly every Sunday after my family gets home from church we have ‘Nacho Sunday’. We love nachos because they are a quick snack our whole family loves. Not to mention they are totally yummy and it’s so fun to add all sorts of different toppings. The other Sunday we had a fun time making these Ultimate Nachos. They are covered with everything delicious and makes for an easy, one dish meal for a busy night. Who doesn’t love that? Kind of a random meal, but fun for kids and adults alike 😉

- 1 bag tortilla chips
- 1 lb. ground beef
- 2 Tbs. taco seasoning
- 8 oz. tomato sauce
- 1 can black beans, drained
- 1-2 cups shredded cheese
- 2-3 cups shredded lettuce
- 1/2 cup jalapeno peppers, sliced
- 1/4 cup cilantro, chopped
- 1-2 avocados, peeled and diced
- 1 cup grape tomatoes, halved
- Ranch or cilantro dressing
- In a sauté pan, add the ground beef.
- Season and brown the ground beef until it is cooked and chopped up.
- Drain any excess grease and then add the taco seasoning, tomato sauce and the drained black beans to the mixture.
- Once the mixture has simmered for 5-7 minutes, turn off the heat and let it cool slightly.
- Pour the tortilla chips onto a cookie sheet.
- Place the meat mixture all over the tortilla chips.
- Sprinkle with the shredded cheese.
- Bake the nachos at 350° until the cheese is melted and they are golden brown.
- Bake for 8-10 minutes, or until crispy and golden.
- Remove from the pan and then sprinkle the chopped lettuce, avocados, cilantro and tomatoes on top.
- Drizzle with the ranch or cilantro dressing.
- Serve right away.
