Nearly every Sunday after my family gets home from church we have ‘Nacho Sunday’. We love nachos because they are a quick snack our whole family loves. Not to mention they are totally yummy and it’s so fun to add all sorts of different toppings. The other Sunday we had a fun time making these Ultimate Nachos. They are covered with everything delicious and makes for an easy, one dish meal for a busy night. Who doesn’t love that? Kind of a random meal, but fun for kids and adults alike 😉

Ultimate Taco Nachos
  1. 1 bag tortilla chips
  2. 1 lb. ground beef
  3. 2 Tbs. taco seasoning
  4. 8 oz. tomato sauce
  5. 1 can black beans, drained
  6. 1-2 cups shredded cheese
  7. 2-3 cups shredded lettuce
  8. 1/2 cup jalapeno peppers, sliced
  9. 1/4 cup cilantro, chopped
  10. 1-2 avocados, peeled and diced
  11. 1 cup grape tomatoes, halved
  12. Ranch or cilantro dressing

  1. In a sauté pan, add the ground beef.
  2. Season and brown the ground beef until it is cooked and chopped up.
  3. Drain any excess grease and then add the taco seasoning, tomato sauce and the drained black beans to the mixture.
  4. Once the mixture has simmered for 5-7 minutes, turn off the heat and let it cool slightly.
  5. Pour the tortilla chips onto a cookie sheet.
  6. Place the meat mixture all over the tortilla chips.
  7. Sprinkle with the shredded cheese.
  8. Bake the nachos at 350° until the cheese is melted and they are golden brown.
  9. Bake for 8-10 minutes, or until crispy and golden.
  10. Remove from the pan and then sprinkle the chopped lettuce, avocados, cilantro and tomatoes on top.
  11. Drizzle with the ranch or cilantro dressing.
  12. Serve right away.
