This past weekend my kids and I spent the day up in our garden winter-izing things. Our garden wasn’t stellar this year, but I was thrilled to find enough cherry tomatoes and fresh basil to make one of my favorite quick & easy recipes. These Margarita Pizzas are something my sister makes for us often, so I was excited to give them a try myself. All you need is some flat pita bread, good olive oil, fresh tomatoes, fresh basil and fresh mozzarella cheese. Those five ingredients create a crispy, fresh, flavorful meal everyone’s going to enjoy. It’s healthy, it’s quick, it’s easy and it uses up the fresh ingredients from your garden. If you need a simple menu idea, give these Margarita Pizzas a try!

Margarita Pita Pizzas
  1. 4-5 flat pita bread (I love the ones sold at Costco--I keep them in my freezer for quick meals)
  2. 2 cups cherry or roma tomatoes, sliced in half or diced
  3. 8 oz. fresh mozzarella cheese
  4. 1 cup fresh basil
  5. Olive oil
  6. Salt and pepper

  1. Preheat your oven to 350 degrees. Place 2-3 pitas on the grills of your oven for 1 minute to crisp them up and get them hot. With a hot pad or tongs, remove the pita breads from the oven and place on a cookie sheet. Cut up the tomatoes and fresh basil and slice the cheese into thin pieces. Drizzle a generous amount of olive oil onto the top of the pita and spread around evenly. Place the tomatoes, basil and mozzarella cheese onto the top of the pita. Sprinkle with salt and pepper and bake for 8-10 minutes, or until the cheese is melted. Remove from the oven, cut and serve.
