IMG_8140 2 One of my favorite recipes in our Ebook is for these homemade Kind bars (or Larabar’s). They are high in protein, low in sugar, and made of real ingredients you won’t be afraid to feed your family. I keep these bars in my freezer for a healthy snack, send them in my kids’ lunches, take them to soccer games, or eat them for a quick dessert. I have made these bars several times now and can’t get enough! I can’t wait for you to try these and let me know what you think. homemade protein bars

Homemade Kind or Larabars (Protein Bars)
  1. ⅓ cup almond butter
  2. ½ tsp. salt
  3. ⅓ cup honey
  4. ⅓ cup maple syrup
  5. 8-10 medjool dates, pits removed
  6. 2 tsp. vanilla extract
  7. 1 cup almonds, chopped
  8. 1 cup regular oats
  9. ⅓ cup milled flax seed
  10. ⅔ cup rice krispy cereal
  11. ⅔ cup dried cranberries
  12. 1 cup dark chocolate chips

  1. In a food processor, add the almonds and puree until the almonds are chopped into small pieces (or you can do this by hand). Measure out the almond butter, salt, honey and maple syrup into a food processor or blender. Remove the pits from the dates and add to the food processor as well. Blend these ingredients together until completely smooth. Add the vanilla extract and mix for another few seconds. If your food processor container is microwavable, microwave this mixture for 1-2 minutes, or until soft. If it’s not, this isn’t necessary but will help it mix a little easier.
  2. In a mixing bowl, combine the chopped almonds, oats, flax seed, krispy cereal, cranberries and chocolate chips. Pour the wet mixture over the dry ingredients and stir until all of the dry items are wet and mixed together.
  3. Spray an 8x8 pan with cooking spray. Pour the granola bar mixture into the pan and press down with a fork until the entire pan is the same thickness. Cover the pan with some saran wrap and keep in the fridge for 30-60 minutes. Once the bars are cooled, turn the pan over on the counter so the bars come out of the pan and are in a perfect square. With a sharp knife, cut the bars into whatever shapes you prefer. Wrap them individually in saran wrap and keep in the fridge or freezer until ready to serve.
