My amazing friend Ellen has been working on some super healthy and delicious recipes we are excited to share with you. For health reasons, she will be experimenting with the many vegan recipes and I can’t wait to try them and post them for you on our blog. I am always looking for some healthy, vegetarian meals to feed my family. Not only for health reasons, but it’s nice to cut meat out of the budget a few nights  a month. I know any recipe from Ellen will be tried and true and a recipe I will love to. Thanks Ellen for another incredible and healthy recipe! This salsa is a perfect recipe for these summer months. It is fresh, a little sweet, spicy and a healthy snack or side dish for anytime of day. Thanks Ellen for another wonderful recipe!

Roasted Habanero and Strawberry Salsa
  1. 1 tsp. olive oil
  2. 2 fresh harbanero peppers (the little orange ones)
  3. 2 large garlic cloves
  4. 1 lb. fresh strawberries, stem removed and diced
  5. 1 atauflo mango, cored and diced small
  6. 1/2 cup diced red onion
  7. 2 Tbs. fresh mint, chopped
  8. 2 Tbs. cilantro, chopped
  9. 1 tsp. honey
  10. 1 tsp. lime juice
  11. 1 tsp. olive oil
  12. Salt and pepper, to taste

  1. Preheat the oven to 400 degrees F. Place the habanero peppers and garlic cloves on a baking sheet and drizzle with 1 tsp olive oil. Roast in the oven for 15 minutes, flipping once.
  2. Meanwhile chop the strawberries, mango, onion, mint and cilantro.
  3. Once the habaneros and garlic have roasted, mince the garlic and then remove the stems and seeds from the habaneros and mince them as well.
  4. Toss all the chopped ingredients in a bowl. In a small dish mix the honey, lime and 1 tsp olive oil and drizzle over mixture. Salt and pepper to taste.
