If you are looking for a healthy, homemade, vegetarian breakfast, this is the recipe for you. I just made it this recipe this morning and my sisters and I are in love with this recipe! For those mornings you’re not wanting a syrupy, sugar filled breakfast, this is a really quick and healthy breakfast or simple dinner.  And for those of you counting calories, you could use egg whites, lowfat mozzarella or parmesan cheese and you have a hearty meal that is not only healthy, but delicious! Healthy Quinoa Spinach Pesto Frittata
Ingredients
  1. 2 cup baby spinach
  2. 1 cup cooked quinoa
  3. 1 red bell pepper, diced
  4. 12 eggs
  5. 1 cup milk
  6. 1 Tbs. pesto
  7. 1 tsp. salt
  8. 1 tsp. black pepper
  9. 1 cup mozzarella cheese, shredded

Instructions
  1. In a pan, place a 3/4 cup of quinoa and 1 cup of water. Turn the heat to medium-high heat and bring the mixture to a boil. Turn the heat to low, put a lid on the quinoa and let it cook for about 10 minutes. Turn the heat off and let it cool until room temperature.
  2. Preheat the oven to 350 degrees. Add the cooked quinoa into a mixing bowl. Add the spinach, diced red bell pepper and mix together. In a bowl, whisk together the egg, milk, pesto, salt and pepper. Pour this mixture over the spinach/quinoa mixture and toss. Spray two glass pie plates with cooking spray. Pour half of the mixture in each pie plate. Sprinkle on the top of each pie plate with the shredded cheese. Put in the oven and bake for 28-30 minutes, or until the center no longer jiggles and is firm. Remove and serve with salsa.
