For those busy nights I don’t know what to make, I love to pull out the grilled and frozen chicken from my freezer and whip together a quick sandwich for lunch or dinner. The other day I was looking to jazz up our traditional Chicken Salad Sandwich recipe to bring on a picnic in the mountains and decided to add a little buffalo flair to the mix. It was so good, I wanted to share this with you in case you need a simple dinner idea, or a grab-and-go lunch.
You could also ‘healthy-ize’ this meal by using greek yogurt instead of mayo and serving it on a sandwich thin. I many times do half mayo and half greek yogurt and you can barely tell. You could also serve these in a lettuce leaf for a low-carb version 😉 Hope you enjoy!
