One of our favorite items at the bake sale are always the large, delicious rice crispy treats. There are few customers who don’t love a slice of this goodness. This year I wanted to make them extra special and filled them with some chocolate and graham crackers. They were a huge it and I was sad when the night ended and they were all gone. Layered S'more Rice Crispy Treats
Rice Crispy Layer
  1. 1 stick butter
  2. 2 (10 oz.) bags mini marshmallows
  3. 1 tsp. vanilla extract
  4. 8 cups crispy rice cereal
  1. 1 1/2 packages graham crackers, crushed
  2. 6 Hershey chocolate candy bar
  3. Chocolate chips, melted for drizzle (optional)

  1. Spray a 9x13 pan with nonstick cooking spray. In a medium sauce pan, heat the butter till it is nearly melted. Add the marshmallows to the butter and turn to low heat. Put a lid on the pan and let soften for 3-5 minutes. Remove the lid and stir the butter and marshmallows until smooth. Add the vanilla and stir. Add the crispy rice cereal and stir until all of the cereal is coated with the marshmallows. Pour half of the mixture into the baking pan and flatten the cereal until smooth and flat.
  2. Crush the graham crackers and add nearly all of them (saving a small portion for garnishing the top) of the crackers on top of the crispy treat. Break up the chocolate bar and sprinkle pieces all over the top of the graham crackers.
  3. Pour the rest of the crispy cereal mixture over the candy bars and graham cracker layer. Spread until smooth.
  4. Let the crispy bars cool and then drizzle with melted chocolate chips on top and a few of the extra graham cracker pieces for garnish. Cut and serve.
