If you are new to Pitaya fruit like I am, you are going to be shocked at what a fun, healthy and beautiful fruit this is. Pitaya is basically a pink dragon fruit.  If you are unfamiliar with dragon fruit, you need to take a little field trip to your local Whole Foods store, or Sprouts and pick one up. Your kids are going to LOVE this new fruit. It is unlike any fruit you’ve ever had. Not to mention the health benefits of this fruit are above and beyond amazing.
