Halloween Stuffed Bell Peppers
4 bell peppers, tops cut off and seeds hollowed out (can carve faces if you want!)
*you may have to shave off a small sliver on the bottom of the pepper to get them to stand correctly
1 tbsp olive oil
1 cup quinoa
1 ¾ cup broth
1 cup salsa
2 tbsp taco seasoning
1 can black beans rinsed and drained
Salt and pepper as needed
Shredded cheese, optional (if not wanting a vegan recipe)
Cilantro and sour cream for garnish (optional)

Preheat oven to 350.
Heat a large skillet with 1 tbsp oil, toast the quinoa until color changes slightly and they start popping (3-5 minutes). Pour in broth, bring to a boil and simmer 15-20 minutes or until the liquid is evaporated. Fluff with a fork and stir in speces, salsa and seasoning. Fold in beans. Fill the bell peppers with the stuffing and place in a 9 X 13 baking dish. Bake for 25-30 minutes or until peppers are tender and filling is heated through.
