The other day I knew it was going to be a crazy night so I threw several chicken breasts into a slow cooker. Not sure what I would turn the shredded chicken into, I decided to create a simple baked taquito recipe. My kids are always begging me to buy the frozen taquitos from Costco. I’m not a huge fan of those, but I have to admit there is something fun about a small, crunchy taco you can dip in your favorite sauces. I am on a Sriracha kick lately and thought that could be a fun flavor to add to my taquitos. Add some shredded cheese, a little mayo for creaminess, sliced green onions and away you go. Bake these cute little things for a few minutes and you have a homemade taquitos that is a lot easier and healthier than the frozen kind you can buy at the store.
